A workload requires more than 80,000 IOPS and very high performance. Which volume from this table is suitable?

Based on the comparison table provided earlier, the only suitable volume is the AWS io2 Block Express.
It supports up to 256,000 IOPS per volume, which easily clears your requirement of more than 80000 IOPS.
